Herbed Meatloaf

makes 4 (5 oz.) servings

 

  • 1 lbs. ground beef, 21% or leaner (or 1/3 each ground pork, veal and beef)
  • 2 oz. grated raw onion
  • 2 oz. grated raw potato
  • 2 oz. grated raw carrot
  • 2 oz. V-8 juice
  • 2 oz. applesauce, natural, no sugar added
  • 1 teaspoon fresh parsley
  • 1/4 teaspoon fresh thyme

Glaze

  1. Preheat oven to 350ºF. Mix all of the ingredients in a mixing bowl until well combined. Shape into the desired shape (loaf, heart, etc.) and place on a shallow baking pan.
  2. Prepare the glaze by placing the ingredients into a mixing bowl and stirring them together to form a sauce. Brush the glaze onto the meat mixture.
  3. Place the meatloaf into the preheated oven. Bake for approximately 1 hour, basting every fifteen minutes. The loaf is done when it reaches an internal temperature of 158ºF.
  4. Remove from the oven, brush with any remaining glaze, and let stand for 10 minutes before slicing. Serve hot.
