Banana Bread

makes 2 loaves (24 servings)

 

  • 11/2 cups all-purpose unbleached flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup Diabetisweet®
  • 1 cup ripe, mashed banana
  • 1/2 cup canola oil
  • 1 egg
  • 2 egg whites
  • 21/2 teaspoon vanilla extract
  • 1/4 cup nonfat yogurt
  1. Preheat oven to 350ºF. Spray two loaf pans with low-fat spray. Sift the dry ingredients into a large bowl.
  2. Combine the wet ingredients in another bowl and blend thoroughly. Add the wet to the dry and stir until the wet and dry are just combined. Do not over mix.
  3. Divide between the two pans. Bake for 50-60 minutes or until a toothpick or cake tester inserted in the center comes out clean.
