Banana Bread
makes 2 loaves (24 servings)
- 11/2 cups all-purpose unbleached flour
- 1/2 cup whole wheat flour
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup Diabetisweet®
- 1 cup ripe, mashed banana
- 1/2 cup canola oil
- 1 egg
- 2 egg whites
- 21/2 teaspoon vanilla extract
- 1/4 cup nonfat yogurt

- Preheat oven to 350ºF. Spray two loaf pans with low-fat spray. Sift the
dry ingredients into a large bowl.
- Combine the wet ingredients in another bowl and blend thoroughly. Add the
wet to the dry and stir until the wet and dry are just combined. Do not over
mix.
- Divide between the two pans. Bake for 50-60 minutes or until a toothpick
or cake tester inserted in the center comes out clean.
